My husband, Jack mentioned yesterday of a New Year tradition— something about whatever you do on the First Day of the Year sets the tone for that year.
Well, here’s the highlights of what we did yesterday.
- Jack proposed a spur-of-the-moment trip to Estes Park.
- Got to spend the day with the whole “immediate” family (I have to add in the “immediate” part as when I said whole family yesterday, Mary disagreed, “Gramma, Lolo, Mama Mer, my cousins are NOT with us…”) My stepdaughter flew in New Year’s Eve and it was great that she spent the whole day with us.
- A pricey and very tasty lunch at the historic Stanley Hotel in Estes Park. I had Redrum Punch (delish!), French Onion Soup (made the right way, according to my stepd, with Gruyere cheese— again, delish!), and the Stanley Salad - elk medallions (yes, ELK), fresh greens with a sherry vinaegrette, candied walnuts, black figs (yummy delish!!!) My stepd had the same, Mary ordered off the Kids Menu— Chicken Fingers (they did this good, real chicken tenders, hand-breaded) with french fries (as good as McD) and Jack had a Bison Burger. We asked for catsup and it came in a little square ceramic bowl — fancy!
- Visited our favorite Glass store in downtown Estes Park where we each got a memento of the trip (I got a little angel, Mary got dolphins, stepd got a golden dragon and Jack got another flying pig) for 50% off!!!
- While I was making Turkey Enchiladas, Mary created her own ‘chilada — Bologna with Corn. The Turkey Enchiladas turned out very well and was enjoyed by all (except Mary) and the Bologna ‘chilada looked good and was enjoyed by…. Mary.

So, it looks like 2008 would be filled with fun travels, fancy meals, great bargains and a
Top Chef (or
Iron Chef) in the making!

How fun! Very good way to start the year. I guess our year will be relaxing mixed with a bit of exercise, because other than a trip to the gym, we lounged about the house for most of the day in our jammies playing games. I think we actually played Life that day! Ha!!

wanna share the recipe for the turkey enchilada? i love mexican food. am sure IC would love Mary’s recipe, she calls corns as yellow peas, hehehe

How have I lived here my whole life and never been to the Stanley hotel? Now that you mentioned that lunch (and that drink!) I am going to HAVE to get up there.
Your enchiladas look delicious! Mary’s ‘chilada…well, I’m sure she enjoyed it anyway.

Mmm…we had Green Chile Chicken Enchiladas for New Years at Casa De Toasted. Basically mommy had a bit of a headache from the tequila and rotisserie chicken makes for an easy meal.

Oh wow! What a great way to start the New Year! I haven’t yet been to Stanley Hotel but I’m hoping that this year we will and also get to hear some of the sounds from the haunted rooms! We haven’t eaten there either. For now, our fave restaurant in Estes Park is The Other Side.
And lots of hugs to the young chef in the making! You go, Mary!
BTW, we got the flyer for the POMs and guess who’s desperate to go!
